In a cocktail shaker, gently muddle the cucumber slices with mint leaves until the cucumber releases its essence. Add the elderflower syrup and fresh lime juice to the shaker, fill with ice, and shake vigorously for about 15 seconds to ensure proper mixing and chilling. Strain the mixture into a tall glass filled with fresh ice cubes.
Top the glass with sparkling water, stirring gently to combine all ingredients without losing too much carbonation. Garnish with a cucumber ribbon, fresh mint sprig, and an additional cucumber slice if desired.
For best results, use English cucumbers as they contain fewer seeds and provide a cleaner flavor. The elderflower syrup can be adjusted to taste, and the drink can be made ahead of time (excluding the sparkling water) and stored in the refrigerator for up to 4 hours. Always add the sparkling water just before serving to maintain the fizz.
