- 4 cups cubed watermelon
- 2 tablespoons rose water
- 1/4 cup fresh lime juice
- 1/4 cup simple syrup
- 12 fresh mint leaves
- 2 cups sparkling water

Place the watermelon cubes in a blender and process until smooth. Strain through a fine-mesh sieve to remove pulp and seeds. In a large pitcher, combine the strained watermelon juice with rose water, lime juice, and simple syrup. Gently muddle the mint leaves to release their oils and add them to the mixture. Just before serving, add the sparkling water and stir gently to combine.
To serve, fill glasses with ice cubes and pour the watermelon mixture over the ice. Garnish each glass with a watermelon wedge, fresh mint sprig, and rose petals if desired. The mocktail should be served immediately to maintain its effervescence and fresh flavor.
For best results, use chilled ingredients and prepare the watermelon base mixture in advance, adding the sparkling water only when ready to serve. The rose water should be added gradually and tasted along the way, as its potency can vary by brand. If the drink is too sweet, additional lime juice can be added to balance the flavors. Store any leftover base mixture (without sparkling water) in an airtight container in the refrigerator for up to 24 hours.
